Final Exam Barbeque
Appropriately, this course will culminate with a barbeque, perhaps the quintessential southern food event. In the South, barbeques have a special significance as political, religious, and community gatherings as the sharing of smoked pork reinforces social bonds.
The practice and production of barbeque has become a key issue in contemporary food studies, so we will explore the historical origins of barbeque, its use as a social practice, the microregional spread of barbecue practices, and the—frequently controversial—techniques for its production.
